What is Neapolitan Style Pizza? 


Neapolitan Style Pizza originated in Naples, Italy in 1889. It is prepared with high quality, simple and fresh ingredients: a handmade dough, Italian tomatoes crushed for sauce, freshly sliced mozzarella cheese, imported olive oil, sea salt & topped with fresh basil. Additional toppings are added, but not too many to overpower the intense unique flavor in every bite.  These hand-crafted pizzas are placed in our wood-fired brick oven from Italy. The heat from the fire causes the temperature to rise up to 1000 degrees. Your pizza, cooked next to the flame, cooks in as little as 97 seconds. 


The crust may bubble up & have small, dark char spots. This char is called this leoparding & is due to the high temperatures reflecting off the ceiling of our brick oven. The charring adds a unique flavor & texture to your pizza. It's the sign of truly serious Neapolitan spot. Be sure to ask for a side of our Caesar dressing to dip your crust into. It's a divine local secret!


Another defining characteristic is adding freshly sliced rich mozzarella cheese, not loads of shredded cheese. Neapolitan Style is a lighter fare, with a bit more sauce than cheese. This leaves the middle of the pie soft and wet in the center. Eating each slice with a bit of a fold is the easiest way to savor your pie and is the true Neapolitan way. Neapolitan pizzas are generally smaller than American pizzas. Our pizzas are 9 inches, closer to the size of a personal pizza. We also offer a 5" kids size pizza which are not just for kids!  You may like to pair it with a fresh, delicious salad. All of our salad dressings & sauces are homemade.

History


Did you know pizza was invented in Naples, Italy? Tomatoes were brought to Europe in the 16th century by explorers returning from Peru. However, many Europeans believed tomatoes were poisonous until peasants in Naples began to top their warm flatbread with tomatoes in the late 18th century. This delicious bite soon became popular. Many visitors to Naples would seek out the local neighborhoods to try this tasty local specialty.


The actual first pizza as we know it was a Neapolitan Margherita Pizza. It was first created by Raffaele Esposito. He created this pizza in 1889 for King Umberto I and Queen Margherita of Savoy when they visited Naples. Esposito baked them what is now a pizza named in honor of the queen whose colors mirrored those of the Italian flag: red (tomatoes), white (mozzarella), and green (basil leaves). The Neapolitan Pizza was born.

Inspired by tradition, our wood-fired pizzas are hand crafted with love. They are made with the freshest high-quality ingredients. The result is a smooth and balanced flavor that blends the aroma of a baked crust with a slightly acidic tomato, fresh mozzarella, and fragrant basil. All pizzas are cooked in our 1000+ degree oven, kissed by the flame. This is the Neapolitan art of pizza making. 


The perfect Neapolitan pizza begins with our signature dough which is created daily in house. It is simple & made with highly refined type 00 flour, fresh baker’s yeast (not dry yeast), water, and salt. It is formed by hand, not a rolling pin, and tossed in the air. Hand tossing is how we shape & stretch our dough, creating a perfect light & airy crust with the correct amount of chew. In addition, we offer a gluten-free crust. Which is a thin, cauliflower crust with a bit of crunch. 


Our dough is then topped with our homemade sauce consisting of crushed Italian tomatoes, olive oil, pepper, and garlic. We add our freshly sliced mozzarella, a bit of Italian extra-virgin olive oil and a sprinkle of sea salt. A touch of fresh basil after fire adds the true fragrance & flavor of Italy. You can create your own masterpiece adding more fresh, high-quality toppings.
