Our pizza originated in Naples, Italy. It is prepared with simple and fresh ingredients: a handmade dough, raw Italian tomatoes, fresh mozzarella cheese, fresh basil, and olive oil. Toppings are added but carefully not to overpower the intense unique flavor in every bite.
One of its defining characteristics is that there is more sauce than cheese. This leaves the middle of the pie a bit wet or soggy and not conducive to being served by the slice. Because of this, Neapolitan pizzas are generally smaller. Our pizzas are 9 inches making them closer to the size of a personal pizza.
The crust may bubble up & have small, dark char spots. This char is called this leoparding & due to the high temperatures reflecting off the ceiling of our brick oven. The charring adds flavor & texture to your pizza. Be sure to ask for a side of our Caesar dressing to dip your crust into. It's a divine local secret.
Our Neapolitan pizzas are cooked fast at very high temperatures (800 F to 1000 F) in our imported Italian wood-fired oven in as little as 97 seconds.
Pizza was invented in Naples, Italy. Tomatoes were brought to Europe in the 16th century by explorers returning from Peru. However, many Europeans believed tomatoes were poisonous until poor peasants in Naples began to top their flatbread with them in the late 18th century. This delicious twist soon became popular. Many visitors to Naples would seek out the poorer neighborhoods to try this tasty local specialty.
The classic Neapolitan Margherita Pizza as we know it, was created by Raffaele Esposito. He created this pizza in 1889 for King Umberto I and Queen Margherita of Savoy when they visited Naples. Esposito baked them a pizza named in honor of the queen whose colors mirrored those of the Italian flag: red (tomatoes), white (mozzarella), and green (basil leaves). The Neapolitan Pizza was born.
Neapolitan pizza begins with the crust. Our signature dough is made with highly refined Italian type 00 wheat flour, fresh brewer’s yeast (not dry yeast), water, and salt. It is formed by hand, not a rolling pin, & tossed in the air. Hand tossing is the best (and funnest) way to shape & stretch our dough, creating a perfect light & airy crust with the right amount of chew.
Our dough is topped with our homemade sauce created with raw, pureed San Marzano tomatoes from Italy. We use fresh sliced mozzarella, not shredded. Finally, our Neapolitan pizza is topped off with fresh basil and Italian extra-virgin olive oil. The ingredients are all-natural and fresh.
Our pizza is baked in a Mugnaini brick pizza oven imported from Italy. Our wood fire allows the temperature to reach up to 1000 degrees & a baking time as little as 97 seconds.
You could eat a different pizza, but Neapolitan Style is an experience. Inspired by tradition, our pizzas are hand crafted & made with the freshest, high-quality ingredients. The result is an intense & balanced flavor that blends the aroma of the baked crust with a slightly acidic tomato, savory mozzarella, fresh basil & slight bitter spicy flavor of olive oil & garlic.
